GFDF Apple Rhubarb Crisp

This yummy GFDF apple rhubarb crisp was the perfect blend of fall and spring.  I used the apples from our tree and the remaining rhubarb from our garden.  This recipe is gluten free and dairy free for those of you who are sensitive as we are.  I can’t even tell the difference and serve it to my friends all the time and they can’t tell it’s GF!  If you don’t happen to have rhubarb around, just leave it out.

This makes a yummy breakfast or satisfying treat for your sweet tooth.

Here’s what you’ll need

3 1/2 cups apples cored and sliced (I didn’t peel mine)

1/2 cup rhubarb

1 tsp. cornstarch

1 T. water

1 tsp. lemon juice

2 tsp. each cinnamon (divided)

1/2 cup gluten free flour blend

1/2 cup gluten free oats

1/4 cup packed brown sugar

1/4 tsp. salt

2 T. DF butter (such as Earth Balance), softened

 

Directions:

Preheat the oven to 350. Spray dish with cooking spray (I used a square stoneware baker).  Right in the pan you’re baking in, In a toss together the apples, lemon juice, sugar, water, cornstarch, 1 tsp. cinnamon, and nutmeg until well combined. Set aside.Make the oatmeal topping in a separate bowl.  Stir flour, oats, brown sugar, 1 teaspoon cinnamon, and butter until crumbly.Sprinkle the topping evenly over the apples and bake for 25 to 30 minutes, until the apples are cooked through, the juices are bubbling, and the topping is a golden brown color
